Everything cooks together in this recipe - chicken, chorizo, potato, red onions and garlic. Basted in the chorizo juices and with the flavour enhanced by a pinch of paprika, the chicken is tender, soft and incredibly yummy!
- 4 chicken thighs plus 4 drumsticks, ready to cook
- 4 potatoes
- 2 sprigs rosemary
- 150g chorizo suitable for cooking, skin removed
- 2 red onions
- 4 garlic cloves
- 2 tbsp. olive oil
- 1/2 tsp. paprika
- Pinch each salt and pepper
Slice the potatoes into thick wedges. Slice the chorizo sausage. Peel the onion and slice into thin wedges.
Preheat oven to 200C. Arrange onions and garlic in the bottom of a large roasting tin. Scatter chorizo on top, then arrange the chicken pieces, potatoes and rosemary on top. Sprinkle with oil, paprika, salt and pepper.
Bake for 45 minutes, spooning the cooking juices over halfway through cooking.
