This festive turkey recipe is perfect for serving up at Christmas time due to its Christmassy orange scented flesh. It's also pretty easy to make, too. Stuff the turkey with your favourite stuffing.
- 1 whole turkey, neck and giblets removed
- 350ml orange juice
- 175ml olive oil
- 175g butter
- Salt and pepper
Melt half the butter with the olive oil and orange juice in a small saucepan and then set to one side, allowing to cool for a little while.
Soak a piece of muslin large enough to cover the turkey with with the orange mixture.
Season the turkey inside and out and if you're using stuffing, put it into the cavity. Spread the butter over the flesh of the turkey, then tie the legs with kitchen string.
Roast the turkey for 25 minutes at 220C, uncovered. Drape the muslin over the turkey, reduce the temperature to 170C and then cook for three hours, basting occasionally with the orange mixture. Cook until the turkey reaches 74C in the middle of the thickest part of the meat.
Remove the muslin, then let the turkey rest for 15 minutes under foil before serving.
