Fresh citrus juice is an excellent marinade for prawns, as it helps to brighten them up and really emphasise their sweet flavour. In this recipe, prawns are marinated in orange and lemon juice and zest, olive oil and garlic, then fried until pink with a little of the marinade for extra oomph.
- 675g king prawns, peeled, deveined and cleaned
- Juice and zest of 2 oranges
- Juice and zest of 2 unwaxed lemons
- 4 garlic cloves
- 2 tbsp. extra-virgin olive oil
- 1/2 tsp. sea salt
- 1/2 tsp. cracked black pepper
Mince the garlic cloves. In a large bowl, whisk together the orange juice, lemon juice, minced garlic, olive oil, sea salt and black pepper. Whisk in the orange zest and lemon zest. Add the prawns and toss to coat. Cover and leave at room temperature for about half an hour.
Heat a frying pan over a medium heat. Add the prawns and fry for 1-2 minutes on either side until pink. Add some of the mrinade and bubble the marinade until slightly thickened, and serve spooned over the prawns.
