Parsnips and apples are roasted in the oven with butter, herbs and seasonings with a little bit of orange zest until tender, sweet and golden in this recipe. Perfect with pork or roasted chicken, this is one simple winter recipe.
- 2 large parsnips
- 2 large apples
- 60g butter
- 1/2 tsp. each dried oregano and rosemary
- Salt and pepper
- 1/2 tsp. grated orange zest
Peel the parsnips and slice on the diagonal. Peel the apples and core, then slice into wedges. Arrange in a baking tray.
Cube the butter. Arrange the butter over the parsnips and apples, sprinkle with oregano, rosemary, salt, pepper and orange zest and toss to combine.
Bake the parsnips and apples in a 200C oven for 30 minutes or until golden and tender, turning halfway through.
