Panzanella recipe

Panzanella is a delicious Italian salad made with stale bread! Bread is tossed with tomatoes, olives, mozzarella and good olive oil and balsamic vinegar. The bread then sucks up all the juices from the tomatoes and the dressing, giving you mouth-wateringly tasty chunks of bread. Perfect!


  • 275g ciabatta bread
  • 4 medium tomatoes
  • 2 small red onions
  • 100g pitted green olives
  • 100g mozzarella cheese
  • 10 basil leaves
  • 3 garlic cloves
  • 75ml olive oil
  • 4 tbsp. olive oil
  • 2 tbsp. balsamic vinegar
  • Salt and pepper


  1. Cut the tomatoes into wedges. Finely slice the onions. Thinly slice the basil leaves and halve the olives. Chop the mozzarella into chunks or tear into pieces.

  2. Tear the ciabatta into chunks. Crush the garlic cloves and toss with the ciabatta, 75ml oil and salt and pepper. Lay in a single layer on a baking tray and bake in a 200C oven for 5 - 10 minutes until golden, then leave to cool slightly.

  3. Toss together the tomatoes, onions, olives and basil together in a large bowl. Whisk the oil and vinegar together, season to taste and pour over the ingredients in the bowl. Add the bread, toss, and leave to sit for 20 minutes. Before serving, stir through the mozzarella chunks.

If you like, skip the toasting stage - this recipe will work just as well without toasting the bread. Recipe serves 4.
