Salmon is topped with a crunchy crispy topping of parmesan breadcrumbs and then served with an easy honey and mustard sauce. It looks impressive, but it tastes even better. Serve it with some wilted spinach and roasted potatoes for a delicious meal.
- 4 x 200g salmon fillets, boneless
- 250ml milk
- 4 tbsp. breadcrumbs
- 2 tbsp. grated parmesan
- Black pepper
- 1 egg
- 50g melted butter
- 1 tbsp. mustard
- 1 tbsp. runny honey
Preheat the oven to 190C. Line a baking tray with baking parchment.
Pour the milk over the salmon and leave to soak for 15 minutes. Mix the breadcrumbs with parmesan and black pepper. Dip the salmon fillets into the egg first and then into the breadcrumbs. Shake to remove excess egg before dipping into the breadcrumbs.
Bake for 15 minutes or until crisp and meanwhile, make the sauce. Stir the butter, mustard and honey together, season to taste and then to serve, drizzle over the salmon.
