A great alternative to mashed potatoes, this recipe is a great way to get children to eat vegetables. Cauliflower and parsnips are steamed until soft, then mashed until smooth with butter and milk.
- 1 cauliflower
- 2 parsnips
- 3 tbsp. butter
- 3 tbsp. milk
- Salt and pepper
Snap the cauliflower into florets. Peel the parsnips, if needed, and chop into chunks. Place into a steamer insert and suspend over a pan of simmering water. Cover and steam for 10-15 minutes until tender.
Drain and place cooked veggies into a bowl. Add the milk and mash until smooth using a potato masher. Season to taste and then beat in the butter using a wooden spoon.
