Parsnip and Cauliflower Mash recipe

Preparation Time: 15 minutes | Cooking Time: 20 minutes

A great alternative to mashed potatoes, this recipe is a great way to get children to eat vegetables. Cauliflower and parsnips are steamed until soft, then mashed until smooth with butter and milk.


  • 1 cauliflower
  • 2 parsnips
  • 3 tbsp. butter
  • 3 tbsp. milk
  • Salt and pepper


  1. Snap the cauliflower into florets. Peel the parsnips, if needed, and chop into chunks. Place into a steamer insert and suspend over a pan of simmering water. Cover and steam for 10-15 minutes until tender.

  2. Drain and place cooked veggies into a bowl. Add the milk and mash until smooth using a potato masher. Season to taste and then beat in the butter using a wooden spoon.

If you like, add some herbs for extra fragrance or even some cheese to make the mash extra rich. Recipe serves 2-4.
