A simple white wine jelly is left to almost set, then slices of peach and fresh raspberries are stirred into the jelly before being left to set. It looks super impressive as the fruit is suspended in the jelly - but it's really very simple.
- 50g raspberries
- 375ml sweet white wine
- 1 peach
- 4 sheets leaf gelatine
- 50g caster sugar
Soak the gelatine in a small amount of water for 5 minutes.
Heat the wine with the sugar in a small saucepan. Stir, until the sugar dissolves and then squeeze the gelatine of excess water before stirring into the wine and sugar. Stir until the gelatine has dissolved into the wine.
Divide the jelly between 4 glasses. Peel, stone and thinly slice the peach. Once the jelly is almost set, stir in the berries and peach slices. Leave to set completely before serving.
