Peanut Butter Muffins recipe

These mega peanut butter muffins are jam packed with peanutty flavour and topped with a delectable peanut butter frosting. They're absolutely delicious - fab for peanut butter lovers!


  • 250g plain flour
  • 75g butter
  • 5 tbsp. crunchy peanut butter
  • 1 tsp. baking powder
  • 100g caster sugar
  • 150ml milk
  • 1 egg
  • 250g icing sugar
  • 100g smooth peanut butter
  • 50ml milk
  • 2 tsp. runny honey
  • 1 tsp. vanilla extract


  1. Preheat oven to 190C. Line or grease a 12-hole muffin tin. Put the butter and peanut butter into a saucepan and melt over a low heat.

  2. Meanwhile, sift flour and baking powder together and whisk in the sugar. Cool the butter and peanut butter slightly and then add the milk and egg. Add the wet mix to the dry mix and stir until just combined, then divide between the liners. Bake for 30-40 minutes or until tested done with a skewer.

  3. Cool the muffins. Cream the peanut butter and sugar until smooth in a large bowl, then beat in the honey and vanilla. Add enough milk to make the icing light and spreadable then use it to top the muffins.

If you like, for extra peanutty flavour, you could add some honey roasted peanuts to the muffin batter. Recipe makes 12.
