Pear Butter recipe

Preparation Time: 20 minutes | Cooking Time: 90 minutes

This deliciously smooth spread is called pear "butter" because it's just so creamy and rich. Pears are simmered until tender, then simmered with brown sugar, lemon zest, a tiny pinch of nutmeg and almond extract.


  • 2.25kg pears, peeled and cored
  • 440g brown sugar
  • 125ml water
  • Zest of 1 lemon
  • Pinch of nutmeg
  • 1 tsp. almond extract


  1. Dice the pears and put into a saucepan with the water. Simmer until tender, around 30 minutes. Cool and then liquidise until smooth and return to a clean saucepan.

  2. Add the brown sugar, lemon zest, nutmeg and almond extract. Stir well and simmer over a low heat until thick and buttery, for around 1 hour. Turn out into hot sterilised jars and then seal. Process in a water bath if you like.

For a little extra sweetness, add a few apples along with the pears. Recipe makes approximately 1.25litres of butter.
