This easy pudding is made with storecupboard ingredients and a delicious combination of mascarpone, ricotta and pear syrup. You can rustle this up in less than 10 minutes, but it tastes particularly delicious when left to stand for an hour or two in the fridge.
- 250g mascarpone cheese
- 250g ricotta cheese
- 1 x 400g tin pears in syrup
- 12 digestive biscuits
- 40g butter
- 100g caster sugar
Melt the butter and crush the biscuits. Mix the butter, half the sugar and the biscuits together and divide between six glasses.
Beat together the mascarpone, ricotta, syrup from the pears and the remaining sugar. Taste and add more sugar if needed. Slice the pears.
Layer the mascarpone mix and sliced pears into the glasses, ending on a layer of pears. To serve, dust with icing sugar or cocoa.
