Pears are simmered with pineapple juice and caster sugar in this easy recipe, resulting in a sweet and sticky honey-like substance that is delicious served with muesli, natural yoghurt or baked into cakes.
- 1.6kg caster sugar
- 1.3kg pears
- 250ml natural pineapple juice
Peel, core and dice the pears. Put the pears into a large pot, cover with pineapple juice and stir in the sugar.
Bring to the boil, stirring frequently and then once boiling, turn down to a simmer. Simmer, stirring often, for 2-3 hours or until thick and syrupy.
Ladle into hot sterilised jars, seal and process in a water bath.
