These delectable wholemeal pear muffins are oh-so-delicious, you'll never realise that they're low in fat and calories and incredibly good for you! Try them for breakfast or as a mid-afternoon snack.
- 250g wholemeal flour
- 200ml milk
- 4 tsp. sunflower oil
- 4 tbsp. runny honey
- 2 eggs
- 150g pear, peeled, cored and grated
- 1 tsp. ground cinnamon
- 1 tsp. baking powder
- 100g mixed nuts and seeds
Preheat oven to 180C and line a muffin tin with paper cases.
Mix together the flour, cinnamon and baking powder. In a bowl, whisk together the oil, honey, eggs and milk. Gradually add the wet mix to the dry mix until you have a smooth batter.
Fold in the pears and nuts and seeds. Drop into the muffin cases.
Bake for 25-30 minutes or until golden and springy to the touch.
