In this recipe, a delicious homemade basil pesto is used to coat pork chops, which are then grilled until tender and delicious. Serve alongside garlic roasted potatoes or your favourite Italian veggies.
- 250ml extra-virgin olive oil
- 85g fresh basil leaves
- 85g freshly grated parmesan cheese
- 70g pine nuts
- 2 garlic cloves
- 1 tsp. salt
- 1/8 tsp. ground nutmeg
- 6 pork chops
- Oil to fry
Put the basil, pine nuts, garlic, salt and nutmeg into a blender and pulse until finely chopped. Gradually pour in the oil whilst pulsing until completely combined and then stir in the parmesan. Season with black pepper, if you like.
Fry pork chops in a little oil until golden. Leave to cool until you can handle them and then coat the chops in the pesto mixture. Put onto a grill rack and grill at a medium heat for 10-15 minutes, or until cooked through to your liking.
