- 10 gelatine leaves
- Small bunch of mint leaves
- 250ml Pimms
- 650ml sparkling lemonade
- 100ml water
Soak the gelatine in a bowl of cold water. Meanwhile, heat 100ml water in a small saucepan. add the mint leaves and leave to infuse over a very low heat for at least five minutes.
Remove the leaves from the pan and add the soaked gelatine. Stir well over a low heat until the gelatine has melted and dissolved.
Add the Pimms and lemonade and stir well. Leave to cool slightly, skim off any foam and then pour into a 1 litre jelly mould. Leave to set in the fridge overnight.
