Pimms Jelly recipe

The most British of desserts - what could be better than Pimms and jelly together? Serve with a light orange cream, or if you prefer, the traditional Pimms garnish - lemons, cucumber, strawberries and oranges.


  • 10 gelatine leaves
  • Small bunch of mint leaves
  • 250ml Pimms
  • 650ml sparkling lemonade
  • 100ml water


  1. Soak the gelatine in a bowl of cold water. Meanwhile, heat 100ml water in a small saucepan. add the mint leaves and leave to infuse over a very low heat for at least five minutes.

  2. Remove the leaves from the pan and add the soaked gelatine. Stir well over a low heat until the gelatine has melted and dissolved.

  3. Add the Pimms and lemonade and stir well. Leave to cool slightly, skim off any foam and then pour into a 1 litre jelly mould. Leave to set in the fridge overnight.

Omit the mint if you like as it could be quite strong for some people. This recipe serves 6-8.
