Sweet and Sticky Pineapple Swordfish recipe

Swordfish is marinated in a mixture of pineapple jam, hoisin sauce, lime juice and sesame oil in this delicious and unusual recipe, yielding sweet, sticky, gently flaking swordfish steaks.


  • 4 swordfish steaks
  • 160g pineapple jam
  • 2 tbsp. fresh lime juice
  • 1 tbsp. freshly chopped coriander
  • 1 tsp. minced ginger
  • 1 tsp. sesame oil
  • Oil


  1. Combine the jam, lime juice, coriander, ginger and sesame oil in a bowl. Stir well to combine, add the swordfish steaks and toss to coat. Cover and put into the fridge for an hour.

  2. Lightly oil a griddle pan. Heat pan over a medium heat. Take the fish from the marinade and lay onto the griddle. Cook for 3-5 minutes on either side, until flaking gently and sticky and sweet on the outside. Discard excess marinade.

If you like, make twice as much marinade and boil down the other half until sticky and syrupy - use it as a dipping sauce. Recipe serves 4.
