Swordfish is marinated in a mixture of pineapple jam, hoisin sauce, lime juice and sesame oil in this delicious and unusual recipe, yielding sweet, sticky, gently flaking swordfish steaks.
- 4 swordfish steaks
- 160g pineapple jam
- 2 tbsp. fresh lime juice
- 1 tbsp. freshly chopped coriander
- 1 tsp. minced ginger
- 1 tsp. sesame oil
Combine the jam, lime juice, coriander, ginger and sesame oil in a bowl. Stir well to combine, add the swordfish steaks and toss to coat. Cover and put into the fridge for an hour.
Lightly oil a griddle pan. Heat pan over a medium heat. Take the fish from the marinade and lay onto the griddle. Cook for 3-5 minutes on either side, until flaking gently and sticky and sweet on the outside. Discard excess marinade.
