Easy Polenta Blueberry Muffins recipe

Polenta and dark brown sugar help to make these blueberry muffins soft, sweet and wonderfully moist. Really simple and really delicious - serve as they are warm from the oven or topped with lashings of cream cheese buttercream.


  • 150g plain flour
  • 250ml milk
  • 120g dark brown soft sugar
  • 60g polenta
  • 2 tsp. baking powder
  • Pinch of salt
  • 115g butter, melted
  • 1 egg
  • 150g blueberries


  1. Preheat oven to 190C and line a muffin tin with paper liners.

  2. Whisk milk, butter and egg together. Sift flour, baking powder and salt into a bowl and whisk in the sugar and polenta. Add blueberries and toss to dredge thoroughly in the ingredients. Gradually stir in the wet mix. Once just combined, drop into the liners and bake for 20 minutes or until just set on top. Cool on a wire rack.

For extra sweetness, add a few chunks of white chocolate to the batter mix. Recipe makes 12.
