Hearty Pork and Chorizo Slow Cooker Stew recipe

Preparation Time: 30 minutes | Cooking Time: 6 hours

This unbelievably delicious stew is made in the slow cooker, with a rich, earthy flavour and a lovely depth of spice from the chorizo.


  • 500g pork, cubed
  • 1 onion
  • 1 celery stalk
  • 1 carrot
  • 2 garlic cloves
  • 200g chorizo sausages, peeled, sliced
  • 2 potatoes
  • 1 1/2 tbsp. smoked paprika
  • 60ml sherry
  • 60ml chicken stock
  • 120ml red wine
  • 1 x 400g chopped tomatoes
  • 1/2 400g tin butterbeans, drained
  • 1 tsp. dried oregano
  • 1 1/2 tbsp. tomato puree
  • Salt and black pepper
  • Oil


  1. Heat a dash of oil in a large frying pan. Add the pork, brown on all sides, then transfer to the slow cooker.

  2. Chop the onion, carrot and celery stalk and dice the potaotes. Fry the onion, carrot, celery stalk and garlic together for around 5 minutes or until softened, then stir in the chorizo, potatoes and paprika and fry until fragrant.

  3. Stir in the sherry, stock and wine and bring to the boil. Pour into the slow cooker along with the tomatoes, butterbeans, oregano, tomato puree and a good pinch of salt and pepper. Stir, cover and cook on low for 6 hours.

You can also use a sliced spicy or herbed sausage in place of the chorizo. Recipe serves 6.
