Pork Escalopes recipe

Preparation Time: 10 minutes | Cooking Time: 20 minutes

Pork is beaten until thin and then coated in a mixture of breadcrumbs, paprika, garlic, salt and pepper, before being fried until crisp. Works well with chicken, too.


  • 4 boneless pork chops, fat removed or trimmed
  • 1 egg
  • Approx. 200g breadcrumbs
  • 1 tsp. each salt, pepper, garlic granules and sweet paprika


  1. Put the chops in between layers of cling and beat using a meat tenderiser until thin.

  2. Whisk the egg and put into a bowl. Mix the breadcrumbs, salt, pepper, garlic and paprika in another bowl.

  3. Dip the chops first in the egg and then in the breadcrumbs to thoroughly coat.

  4. Heat a little oil in a frying pan and add the chops. Fry for 7-9 minutes on either side over a medium-high heat until golden and crisp on the inside and cooked through on the inside.

If you like, you can make these very spicy with some dried chilli flakes and chilli powder, or you could make them aromatic with the addition of cinnamon or cloves. Recipe serves 4.
