Rich and delicious, this pork stroganoff is easy enough for mid-week but delicious enough for a dinner party. Pork is simmered with mushrooms, onions, sour cream, parsley and mustard to create a yummy pork dish perfect for serving with roasties.
- 4 thick pork chops
- 1 onion
- 100g mushrooms
- 100ml soured cream
- 1 dstsp. mustard
- 4 tbsp. water
- Small handful freshly chopped parsley
- 2 tbsp. oil
- Salt and pepper
Thinly slice the onion and the mushrooms. Heat oil in a frying pan and fry the chops until browned.
Set the pork to one side. Add the onion and mushrooms to the frying pan and cook until tender. Add the chops, water, mustard, salt and pepper and bring to the boil. Reduce heat to very low, cover and simmer for 1 hour. (Add more water if needed)
Remove the chops from the pan and add the soured cream. Heat through until just under bubbling point (don't boil) and stir the parsley through. Pour the sauce over the chops to serve.
