Potato Breakfast Pancakes recipe

Preparation Time: 20 minutes | Cooking Time: 15 minutes

These easy potato pancakes are perfect for serving at breakfast with beans, bacon and a fried egg - but they're also yummy with veg and sausage at teatime, too.

Ingredients

  • 250g cold mashed potato
  • 75g plain flour
  • 1 tsp. baking powder
  • 2 eggs
  • 125ml milk
  • 1 tbsp. snipped chives
  • Salt and black pepper

Directions

  1. Stir the flour and baking powder into the cold mash, then beat in the eggs, milk, chives and a good pinch of salt and pepper.

  2. To fry, heat a little butter and oil in a large frying pan. Drop in 1 tbsp. of the batter per pancake. Fry for around 1 minute, or until bubbles appear on the surface, then flip and fry for another 1-2 minutes or until golden brown on both sides. Serve hot.

For extra flavour, add a touch of chilli and coriander to the potato cakes. Recipe makes around 8.
