Onions are cooked down until sweet and golden, then combined with prawns, soured cream and paprika and tossed with cooked creamy gnocchi in this deceptively simple recipe.
- 2 onions
- 1 tbsp. each butter and oil
- 1 tsp. dark brown sugar
- 1 tsp. sweet paprika
- 3 tbsp. soured cream
- 24 peeled and deveined prawns
- Small handful thinly sliced basil leaves
- Small handful freshly grated parmesan cheese
- 500g gnocchi
- Salt and pepper
Thinly slice the onions. Heat the butter and oil in a large frying pan. Add the onions and fry until golden brown. Add the sugar and fry for a little longer until the onions are sweet and caramelised.
Add the prawns to the pan and cook until they turn pink and opaque. Add the soured cream and paprika and cook until simmering.
Cook the gnocchi in a pan of boiling salted water until they float to the top of the pan, then add to the pan of prawns. Toss to coat in the sauce, then serve immediately sprinkled with fresh basil and parmesan.
