This sweet and delicious curry is easier to make than you might think - made with fresh prawns, mango and mango juice, the sweetness of the fruit helps to counteract the spice of the curry, making this perfect for people who don't like overly spicy foods.
- 500g king prawns, peeled, deveined, head removed
- 1 mango
- 1 onion
- 1 tbsp. butter + 1 tbsp. oil
- 2 garlic cloves
- 1 thumb-sized piece root ginger, peeled
- 2 green cardamom pods
- 1 cinnamon stick
- 1 tsp. chilli powder
- 1 tsp. ground turmeric
- 200ml mango juice
- Small handful freshly chopped coriander
- Salt and pepper
Finely dice the onion. Mince the garlic cloves and ginger. Crush the cardamom pods and snap the cinnamon stick.
Melt the butter and oil together in a large saucepan. Add the onion and cook until soft, golden and sweet. Add the garlic, ginger, mango, cardamom pods and cinnamon stick and fry for another 2-3 minutes, until fragrant.
Add the turmeric and chilli powder. Stir in the prawns and fry for 20-30 seconds, then stir in the mango juice. Simmer for 5 minutes, until the prawns are cooked through, then season to taste and stir in the coriander. Remove the cinnamon stick.
