This is an easy stir fry dish that’s perfect for seafood lovers. Serve it with some steamed rice or add a pack of egg noodles to the dish for the last two minutes of cooking.
- 3 tbsp. sunflower oil
- 200g prawns, use fresh if you can, if using frozen defrost them and pat them dry before use
- 3 garlic cloves
- 1 small red pepper
- 2 tbsp. soy sauce
- 150g spinach
Finely chop the garlic cloves into very thin slices. Slice the red pepper in half and then remove the pith and the seeds and thinly slice the pepper.
Heat a wok until hot and add the oil. Add the garlic slices and then stir fry them for two minutes or until they turn golden brown. Remove them from the oil with a slotted spoon and set them to one side.
Add the pepper and stir fry for a minute or until softened, and then remove it from the pan and set it to one side.
Put the prawns into the pan and stir fry them for around 3 minutes, then add the soy sauce. Add the spinach and cook until just wilted, then return the garlic and pepper to the pan.
