Purple sprouting broccoli is packed with nutrients. Don't lose its delicate flavour by boiling it - instead, roast with olive oil, garlic and grated parmesan cheese.
- 500g purple sprouting broccoli
- 2 tbsp. olive oil
- 3 tbsp. grated parmesan cheese
- 1 garlic clove, minced
- Good pinch each salt and black pepper
Preheat oven to 200C. Line a baking tray with parchment paper.
Combine oil, parmesan, garlic, salt and pepper in a bowl. Add the broccoli and toss to combine, then spread the broccoli in a single layer on the baking tray.
Bake for 10-15 minutes or until the broccoli is tender and lightly crisp.
