Purple Sprouting Broccoli with Garlic and Parmesan recipe

Purple sprouting broccoli is packed with nutrients. Don't lose its delicate flavour by boiling it - instead, roast with olive oil, garlic and grated parmesan cheese.


  • 500g purple sprouting broccoli
  • 2 tbsp. olive oil
  • 3 tbsp. grated parmesan cheese
  • 1 garlic clove, minced
  • Good pinch each salt and black pepper


  1. Preheat oven to 200C. Line a baking tray with parchment paper.

  2. Combine oil, parmesan, garlic, salt and pepper in a bowl. Add the broccoli and toss to combine, then spread the broccoli in a single layer on the baking tray.

  3. Bake for 10-15 minutes or until the broccoli is tender and lightly crisp.

If you like, sprinkle the broccoli with pine nuts and extra parmesan to serve. Recipe serves 4 as a side.
