Quesadillas are basically folded and filled tortilla wraps, chopped in half. You can fill quesadillas with anything you please, although this recipe uses chicken, cream cheese, salsa, green pepper and onion to create a filling and tasty dinner that is kid-friendly.
- 250g grated Cheddar
- 4 chicken breasts
- 200g cream cheese
- 300g salsa, homemade or shop-bought
- 8 large flour tortillas
- 2 green peppers
- 2 spring onions
- Olive oil
- Salt and pepper
Preheat the oven to 180C.
Slice the chicken into thin strips, thinly slice the sping onions and julienne the green peppers, removing the seeds.
Season the chicken with salt and pepper, heat a little olive oil in a frying pan and cook the chicken until no longer pink in the middle. Remove from the pan and set to one side.
Spread the salsa over four of the tortillas.
Distribute the cooked chicken, green pepper and onion evenly between the tortillas. Sprinkle the cheddar cheese over the mixture.
Spread the cream cheese over the other four tortillas. Place the tortillas cheese side down on top of the chicken and salsa tortillas, place onto baking trays and cook in the oven until golden brown on top and the cheese is melted.
