This quick and easy Christmas pudding is made with just four ingredients, making it ideal for pudding novices. It's heavier than other Christmas puddings, so you'll only need a small portion!
- 1kg mixed dried fruit
- 250g self-raising flour
- 500ml orange juice
- 1 tsp. mixed spice
Place the fruit and orange juice into a bowl. Stir, cover and leave to sit overnight.
Grease a large pudding mould and preheat the oven to 150C.
Sift the flour and mixed spice into the fruit mix. Stir to combine and pour into the prepared mould. Bake for 1 1/2 to 2 hours or until a skewer inserted into the centre of the cake comes out clean. Cover with foil if the pud browns too quickly.
