Quick Banana, Raisin and Walnut Cake recipe

Bananas, raisins and walnuts are baked into a lightly spiced cinnamon cake batter in this recipe. If you like, top with a little bit of icing and some extra sliced bananas. Perfect for feeding a crowd or if you need to throw together an impromptu pud.


  • 4 very ripe bananas, mashed until smooth
  • 300g caster sugar
  • 4 eggs
  • 225ml sunflower oil
  • 425g plain flour
  • 2 tsp. bicarbonate of soda
  • 2 tsp. cinnamon
  • 1/2 tsp. salt
  • 150g walnuts, chopped
  • 100g raisins


  1. Preheat the oven to 180C and lightly grease a smallish rectangular baking tin.

  2. Mash together the bananas, sugar, eggs and oil and stir to combine, then sift in the flour, bicarb, cinnamon and salt. Stir to combine. Fold in the walnuts and raisins, then pour into the baking tin and bake for an hour or until tested done with a skewer. Serve warm or cool.

Whip up a creamy cinnamon icing by beating icing sugar and butter together until creamy, then add a pinch of cinnamon to taste. Recipe serves 8-12.
