Chewy, squishy, fudgey and sweet, these quick and simple coconut macaroons are perfect for parties. The dark chocolate keeps them luxurious without being overly sweet.
- 100g desiccated coconut
- 5 tbsp. caster sugar
- 2 tbsp. plain flour
- 2 egg whites
- 1/2 tsp. vanilla extract
- 100g dark chocolate, melted in a bowl over a pan of simmering water
Preheat the oven to 180C and grease and line baking trays.
Whisk together the sugar, flour, egg whites and vanilla. Fold in the coconut. Drop by the dessertspoonful onto the prepared baking trays and bake for 15-20 minutes or until lightly brown on the outside and chewy in the middle.
Leave to cool. When cooled, dip into dark chocolate or drizzle with dark chocolate and leave to set.
