Rarebit Muffins recipe

Preparation Time: 20 minutes | Cooking Time: 25 minutes

These delicious savoury muffins are flavoured with strong cheddar cheese, mustard and Worcestershire sauce. They're perfect for lunchboxes and are even better served topped with a little bit of bacon.


  • 225g self-raising flour
  • 50g plain flour
  • 1 tsp. baking powder
  • 1/2 tsp. bicarbonate of soda
  • Pinch salt
  • 1/2 tsp. mustard powder
  • 100g strong mature cheddar, half grated, half cubed
  • 6 tbsp. veg oil
  • 150g greek yoghurt
  • 125ml milk
  • 1 egg
  • 1 tbsp. Worcestershire sauce


  1. Heat the oven to 180C and grease or line a 12-hole muffin tin.

  2. Combine the flours, baking powder, bicarb, salt and mustard powder. Whisk together the veg oil, yoghurt, milk, egg and Worcestershire sauce and stir in the cheese. Mix the dry and wet mix together then divide between the muffin liners.

  3. Bake for 20-25 minutes or until golden and risen.

Add some chopped cooked onions or bacon to the muffin batter. Recipe makes 12.
