If you're a fan of loaf cakes warm from the oven, drizzled with chocolate sauce, honey or just spread with a little bit of butter, you'll love this raspberry and white chocolate loaf.
- 150g icing sugar
- 150g melted butter
- 150g plain flour
- 3 eggs
- 1 tsp. baking powder
- 125g raspberries, halved
- 125g white chocolate, chopped into chunks
Preheat the oven to 180C and grease and line a loaf tin.
Whisk sugar and eggs together until pale and fluffy, then stir in the butter, flour and baking powder until smooth.
Fold in raspberries and chocolate, then bake for 40 minutes or until a skewer inserted into the centre comes out clean.
