Ratatouille recipe

Preparation Time: 10 minutes | Cooking Time: 40 minutes

This yummy ratatouille is packed with veggies and just one serving of it will provide you almost all of your 5-a-day. Aubergine, tomatoes, courgette, red pepper and more combine in a yummy tomato sauce. Serve as it is, with chicken or herbed potato wedges.


  • 1 large aubergine
  • 2 small courgettes
  • 1 onion
  • 4 garlic cloves
  • 1 x 400g tin chopped tomatoes
  • 1 red pepper
  • 1 tbsp. herbs de Provence
  • Salt and pepper
  • 3 tbsp. oil


  1. Trim and chop the aubergine into chunks. Trim the courgettes and slice. Finely chop the onion. Mince the garlic cloves. Halve the red pepper, remove the pith and seeds and slice into strips.

  2. Heat oil in a saucepan. Add the onion and garlic and fry until soft and golden, around 5 minutes. Add the aubergine, courgettes, tomatoes, red pepper, herbs and salt and pepper. Cover and simmer for 20-30 minutes until the veggies are tender. If the sauce is thin, simmer uncovered over a high heat for 2-5 minutes until thickened.

Ratatouille is super adaptable, so add the veggies of your choice - mushrooms, extra peppers, cherry tomatoes and more. Freshly chopped basil would make a great addition. Recipe serves 2-4.
