Raw Avocado Soup recipe

Preparation Time: 15 minutes

This raw avocado soup is packed with nutritious and delicious ingredients - avocado, peas, mint and cucumber and flavoured with a delicious combination of lemon juice, extra-virgin olive oil and tahini. Perfect for a dinner party starter!


  • 1 avocado
  • 250g frozen peas, left to thaw for an hour or two
  • 1 small cucumber
  • 480ml water
  • 2 tbsp. extra-virgin olive oil
  • 2 tbsp. chopped mint leaves
  • Juice of 1/2 lemon
  • 1 tbsp. tahini paste
  • Salt and black pepper


  1. Slice the avocado in half and remove the stone. Scoop out the flesh. Dice the cucumber.

  2. In a food processor, whiz the avocado, peas and cucumber until smooth. Add the water, olive oil, mint, lemon juice, tahini, salt and pepper and whiz until smooth.

  3. Serve cooled.

Serve with a sprinkle of chopped mint for extra freshness. Recipe serves 2.
