This raw avocado soup is packed with nutritious and delicious ingredients - avocado, peas, mint and cucumber and flavoured with a delicious combination of lemon juice, extra-virgin olive oil and tahini. Perfect for a dinner party starter!
- 1 avocado
- 250g frozen peas, left to thaw for an hour or two
- 1 small cucumber
- 480ml water
- 2 tbsp. extra-virgin olive oil
- 2 tbsp. chopped mint leaves
- Juice of 1/2 lemon
- 1 tbsp. tahini paste
- Salt and black pepper
Slice the avocado in half and remove the stone. Scoop out the flesh. Dice the cucumber.
In a food processor, whiz the avocado, peas and cucumber until smooth. Add the water, olive oil, mint, lemon juice, tahini, salt and pepper and whiz until smooth.
