Spiced Red Cabbage, Apple and Walnuts recipe

Preparation Time: 15 minutes | Cooking Time: 20 minutes

Red cabbage is flavoured with cloves, vinegar and sugar, then cooked with apple and walnuts in this delicious and nutritious side dish. Serve with roast meats.


  • 1 red cabbage
  • 1 apple
  • 25g butter
  • 1 bay leaf
  • 3 cloves
  • 100ml cider vinegar
  • 25g muscovado sugar
  • Handful toasted, chopped walnuts


  1. Finely slice the red cabbage. Peel, core and grate the apple.

  2. Put cabbage, apple, butter, bay and cloves into a pan. Cook, stirrring, until the cabbage wilts. Add the vinegar and cook, stirring, until it almost all disappears. Stir in the sugar until dissolved, then stir in the walnuts.

You could easily use a pear in place of an apple. Recipe serves 4.
