Red cabbage is flavoured with cloves, vinegar and sugar, then cooked with apple and walnuts in this delicious and nutritious side dish. Serve with roast meats.
- 1 red cabbage
- 1 apple
- 25g butter
- 1 bay leaf
- 3 cloves
- 100ml cider vinegar
- 25g muscovado sugar
- Handful toasted, chopped walnuts
Finely slice the red cabbage. Peel, core and grate the apple.
Put cabbage, apple, butter, bay and cloves into a pan. Cook, stirrring, until the cabbage wilts. Add the vinegar and cook, stirring, until it almost all disappears. Stir in the sugar until dissolved, then stir in the walnuts.
