Sweet, with bags of crunch and flavour from all of the fantastic ingredients: red cabbage, figs, red onion, rocket, goat's cheese and walnuts, this salad is the perfect dinner party dish as it looks impressive but takes just a few minutes to prepare.
- 1 small red cabbage, core removed
- 1 small red onion
- 2 large handfuls rocket
- 8 figs
- 100g goat's cheese
- 100g walnuts
- Seeds of one pomegranate
- 4 tbsp. extra-virgin olive oil
- 2 tbsp. balsamic vinegar
- Salt and pepper to taste
Finely shred the cabbage and discard the core. Thinly slice the red onion into half moons. Slice the figs into quarters.
Toast the walnuts in a dry frying pan for 30 seconds or until lightly browned, being careful to ensure the walnuts don't burn.
Toss together the cabbage, onion, rocket, figs and pomegranate seeds. Pile onto a platter and scatter with crumbled goat's cheese and walnuts. Whisk oil, vinegar, salt and pepper together and drizzle over the salad to serve.
