These rich and rather decadent pork chops are incredibly easy to make but you'll be pleasantly surprised at the results - pork is baked until golden and almost cooked through, then topped with caramelised red onion chutney, mustard, thyme and cheddar cheese. Delish!
- 4 pork chops
- 2 tsp oil
- Salt and pepper
- 4 tbsp. caramelised red onion chutney
- 50g grated cheddar cheese
- 1 tsp. English mustard
- 1 tsp. dried thyme
Rub the chops with the oil and season with salt and pepper on either side. Put into a 180C oven and bake for 12-15 minutes, turning half way through cooking.
Take the chops out of the oven and brush one side of each chop with a little bit of the mustard. Coat each chop with 1 tbsp. of the chutney. Mix together the cheese and thyme and sprinkle evenly over the chops.
Bake until the cheese turns golden and bubbly.
