Red Velvet Cupcakes recipe

Red velvet cakes don't have a "red" flavour - they are basically rich chocolate cakes, with a moist, decadent texture. If you can, use a paste food colouring as it will give you brilliant colour without compromising the flavour. Some red velvet recipes call for buttermilk, but this one calls for regular milk - but you can probably use either.


  • 350g plain flour
  • 300g caster sugar
  • 2 tbsp. cocoa powder
  • 1 tsp. baking powder
  • 2 eggs
  • 350ml milk
  • 350ml vegetable oil
  • 1 tbsp. vinegar
  • 1 dstsp. vanilla extract
  • Red food colouring
  • 250g cream cheese
  • 100g butter
  • 200g icing sugar
  • 1 dstsp. vanilla extract


  1. Preheat the oven to 180C and grease 12 cupcake liners. Place onto a baking tray.

  2. In one bowl, whisk the flour, sugar, cocoa powder and baking powder together. In another, whisk the eggs, milk, oil, vinegar and vanilla. Pour the wet mixture into the dry mixture and stir to combine. Add food colouring until you get a rich red coloured cake batter.

  3. Divide the mixture between the prepared cupcake liners. Bake for 15-20 minutes until they test cooked when a skewer is inserted into the centre of a cake.

  4. Leave the cupcakes on a wire rack to cool. Make the icing by beating together the cream cheese and butter. Beat in the vanilla then gradually beat in the icing sugar. Use to ice the cupcakes.

The contrast of the white icing to the red cake is really beautiful, but you could add some red colouring to the icing for an all-red cupcake. Recipe makes 24 cupcakes.
