Redcurrant and Apple Red Cabbage recipe

This fruity red cabbage recipe is perfect for serving alongside roasted meats. Red cabbage is cooked slowly with apple juice, apples, redcurrant jelly and sugar until tender.


  • 1 large red cabbage
  • 2 red onions
  • 2 raw beetroots, peeled
  • 4 apples
  • 300ml apple juice
  • 100ml cider vinegar
  • 100g redcurrant jelly
  • 100g caster sugar
  • Salt and black pepper


  1. Finely shred the cabbage. Thinly slice the onions into half moons. Grate the beetroots. Peel and core the apples and grate.

  2. In a large pot, combine the cabbage, onions, beetroots, apples, apple juice, vinegar, jelly, sugar, salt and pepper. Cover and simmer for an hour. Serve warm or at room temperature.

If you prefer your cabbage a little more sour, add some more vinegar and discard some of the juice. Recipe serves 4.
