Classic Rhubarb Crumble recipe

Preparation Time: 20 minutes | Cooking Time: 40 minutes

One of the simplest yet most delicious ways to serve rhubarb is in a crumble, and this recipe doesn't disappoint. Rhubarb, sugar and flour are tossed together, then topped with an oaty crumble topping. Enjoy hot or cold with lashings of custard.


  • 350g rhubarb
  • 200g caster sugar
  • 3 tbsp. flour
  • 200g brown sugar
  • 200g plain flour
  • 225g butter
  • 85g porridge oats


  1. Trim and chop the rhubarb. Toss with the sugar and flour and spread evenly in an oven-proof dish.

  2. Stir together the sugar, flour and oats. Dot the butter over the mix and rub into the dry mix with your fingertips until the mix resembles breadcrumbs. Spread evenly over the rhubarb and bake at 190C for 40 minutes or until the crumble is golden and the fruit bubbling.

For a little extra flavour, add 1/2 tsp. cinnamon to the crumble mix. Recipe serves 6-8.
