This thick, rich and creamy cherry ice cream is made with one very special secret ingredient - balsamic vinegar! It gives the cherries a deliciously tart kick and helps to balance out the sweetness of the ice cream. Top with chocolate for a wonderful after-dinner pud.
- 500g cherries, stoned
- 2 tbsp. lemon juice
- 1 tbsp. balsamic vinegar
- 500ml double cream
- 250ml milk
- 200g sugar
- 1 tsp. vanilla extract
Quarter the cherries and put into a bowl with the lemon juice, balsamic and half of the sugar. Stir well and leave to sit for two hours.
Once marinated, mash half the cherries with a fork and set aside the rest of the cherries.
In a bowl, whisk the milk and sugar until the sugar dissolves using a hand mixer. Stir in the cream, vanilla and the mashed cherries. Pour into an ice cream maker and process according to instructions. Add the quartered cherries 5 minutes before the end of the processing time along with any juice.
