These fantastic Italian-style pancakes are made with ricotta, giving them a fluffy texture and a cheesecake-like flavour. Topped with slices of orange, runny honey and chopped almonds, they make a fabulous dessert or breakfast.
- 200g plain flour
- 1 tsp. baking powder
- 1 egg
- 200ml milk
- 220g ricotta
- 2 oranges
- 4 tbsp. runny honey
- 2 tbsp. chopped almonds
Peel the oranges, remove the pith, then slice into thin rounds.
Sift the flour and baking powder together. Whisk the egg and half the milk into the batter until smooth, then whisk in the rest of the milk until smooth. Fold in the ricotta.
To fry, heat a little oil or butter in a large frying pan over a medium high heat. Drop 3-4tbsp. batter into the pan and cook until bubbles form on the surface of the pancake. Flip and cook for another minute or two or until golden brown on either side.
To serve, arrange orange slices over the pancakes, drizzle with honey then sprinkle with almonds.
