Roast Italian Potatoes recipe

Preparation Time: 10 minutes | Cooking Time: 50 minutes

These crisp roast potatoes are flavoured with Italian herbs and garlic - and they are perfect for pairing with any of our meat dishes.


  • 900g potatoes
  • 4 garlic cloves
  • 2 tbsp. oil
  • 2 tbsp. dried parsley
  • 1 tsp. each dried basil and oregano
  • 3/4 tsp. salt
  • 1/4 tsp. black pepper


  1. Roughly chop the potatoes into smallish chunks. Mince the garlic cloves.

  2. In a large bowl, toss the potatoes, oil, parsley, garlic, oregano, basil, salt and pepper until the potatoes are evenly coated.

  3. Transfer the potatoes to a baking tin. Cook in a 200C oven for 30 minutes, stir well and bake for another 10-20 minutes until golden and crisp on the outside and cooked through.

You can use fresh herbs on these potatoes if you like, but they could burn easily, so if you use them toss them through the potatoes when they are cooked. Recipe serves 8.
