These crisp roast potatoes are flavoured with Italian herbs and garlic - and they are perfect for pairing with any of our meat dishes.
- 900g potatoes
- 4 garlic cloves
- 2 tbsp. oil
- 2 tbsp. dried parsley
- 1 tsp. each dried basil and oregano
- 3/4 tsp. salt
- 1/4 tsp. black pepper
Roughly chop the potatoes into smallish chunks. Mince the garlic cloves.
In a large bowl, toss the potatoes, oil, parsley, garlic, oregano, basil, salt and pepper until the potatoes are evenly coated.
Transfer the potatoes to a baking tin. Cook in a 200C oven for 30 minutes, stir well and bake for another 10-20 minutes until golden and crisp on the outside and cooked through.
