Roast Wild Ducks with Fruit recipe

Preparation Time: 30 minutes | Cooking Time: 5 hours

Wild duck has an incredibly rich and delicious flavour - and when stuffed with onions and fresh fruit, it tastes even better. In this recipe, wild ducks are stuffed and roasted in oven bags along with some delicious seasonings.


  • 2 wild ducks, ready to cook
  • 2 onions, 2 apples and 2 apricots
  • 200ml olive oil
  • 250ml chicken stock
  • 4 bay leaves
  • 1 tsp. dried mixed herbs
  • 4 garlic cloves, crushed
  • 6 tbsp. soy sauce
  • Pinch of oregano
  • Salt and pepper


  1. Peel the onions. Peel the apples and remove the core. Peel the apricots and remove the stone. Chop everything in half. Remove any giblets from the duck and stuff with the onion, apple and apricot.

  2. Mix the olive oil, chicken stock, bay, mixed herbs, garlic, soy sauce, oregano, salt and pepper. Divide between two oven bags, add a duck and seal the bag. Place into an oven dish. Bake for 30 minutes at 200C, then turn the heat down and cook at 120C for 3-4 hours or until tender. Turn the duck halfway through cooking, and make a small vent near to the oven bag seal so that steam can escape. Leave to rest for at least 30 minutes under foil before serving.

Make this dish a little Chinese in flavour by adding some black bean paste and some five-spice powder to the oven bag mix. Recipe serves 2.
