A new and delicious way to serve cabbage - in this recipe, Savoy cabbage is simply roasted in the oven with a little oil, balsamic vinegar and salt and pepper until tender and delicious.
- 1 large Savoy cabbage
- Salt and pepper
- 2 tbsp. olive oil
- 3 tbsp. balsamic vinegar
Remove the outer leaves from the cabbage. Discard. Remove the rest of the leaves, going down to the core, remove the stems and then rip the leaves into pieces.
Toss cabbage with oil, salt and pepper. Spread into a baking tin and cover with foil. Bake at 200C for 20 minutes, remove the foil and stir in the vinegar. Bake for another 15-20 minutes or until golden, lightly charred and tender.
