In this recipe, asparagus is sprinkled with salt, pepper, olive oil and parmesan cheese, then baked until crisp and golden. Best served with some really good, thick balsamic vinegar.
- 500g asparagus
- 1 tbsp. extra-virgin olive oil
- 2 tbsp. grated parmesan cheese
- 1/4 tsp. each salt and pepper
Preheat oven to 220C. Toss asparagus with oil, parmesan, salt and pepper and spread in a single layer on a baking tray.
Bake for 12-15 minutes until the asparagus is tender and soft. Serve immediately. The cheese should be lightly browned.
