Roasted Parmesan Asparagus recipe

Preparation Time: 5 minutes | Cooking Time: 15 minutes

In this recipe, asparagus is sprinkled with salt, pepper, olive oil and parmesan cheese, then baked until crisp and golden. Best served with some really good, thick balsamic vinegar.


  • 500g asparagus
  • 1 tbsp. extra-virgin olive oil
  • 2 tbsp. grated parmesan cheese
  • 1/4 tsp. each salt and pepper


  1. Preheat oven to 220C. Toss asparagus with oil, parmesan, salt and pepper and spread in a single layer on a baking tray.

  2. Bake for 12-15 minutes until the asparagus is tender and soft. Serve immediately. The cheese should be lightly browned.

You could add a little grated cheddar or mozzarella for the last few minutes of cooking to make this dish extra cheesy. Recipe serves 4.
