Roasted Rosemary Mushrooms recipe

Preparation Time: 10 minutes | Cooking Time: 30 minutes

Roasting really brings out the flavour of mushrooms and in this recipe, rosemary, garlic and a drop of balsamic combine to create a delicious and nutritious side dish.


  • 500g mixed mushrooms
  • 3 garlic cloves
  • 2 tbsp. oil
  • 1 tbsp. finely chopped rosemary
  • 1 tbsp. white balsamic (or regular balsamic if you can't find white)
  • Salt and pepper


  1. Halve the mushrooms and spread in a baking tin. Bake at 180C for 15 minutes.

  2. Meanwhile, mince the garlic cloves. Whisk together the garlic, oil, rosemary, balsamic and a pinch of salt and pepper. Pour over the mushrooms, toss to coat, then return to the oven for a further 15 minutes. Drain excess liquid if needed.

You can use any woody herb for this recipe - thyme and fresh oregano would both work well. Recipe serves 4.
