Roasting really brings out the flavour of mushrooms and in this recipe, rosemary, garlic and a drop of balsamic combine to create a delicious and nutritious side dish.
- 500g mixed mushrooms
- 3 garlic cloves
- 2 tbsp. oil
- 1 tbsp. finely chopped rosemary
- 1 tbsp. white balsamic (or regular balsamic if you can't find white)
- Salt and pepper
Halve the mushrooms and spread in a baking tin. Bake at 180C for 15 minutes.
Meanwhile, mince the garlic cloves. Whisk together the garlic, oil, rosemary, balsamic and a pinch of salt and pepper. Pour over the mushrooms, toss to coat, then return to the oven for a further 15 minutes. Drain excess liquid if needed.
