Rocky Road Ice Cream recipe

Preparation Time: 4 hours

This rich chocolate ice cream is studded with mini marshmallows, pecans and chocolate chunks. It's a great dessert on its own, but is also lovely served with chocolate cake.


  • 400g condensed milk
  • 475ml double cream
  • 225ml single cream
  • 50g cocoa powder
  • 1 tbsp. vanilla essence
  • 75g chopped pecans
  • 75g mini marshmallows
  • 75g chocolate chunks


  1. Combined the condensed milk and cocoa powder in a saucepan. Over a low heat, cook and stir for around 5 minutes, or until the milk slightly thickens. Remove from the heat and cool slightly, then stir in the double cream, single cream and vanilla. Chill in the fridge.

  2. Pour into an ice cream maker or into a freezer-proof container. Churn according to manufacturer's instructions or freeze for 3-4 hours, stirring half way through. When the ice cream is soft but not frozen, stir in the pecans, marshmallows and chocolate chunks.

If you like, you can add walnuts or peanuts in place of the pecans. Recipe serves 6-8.
