If you love the flavour of rum and raisins, you'll love this rich fruity loaf. Flavoured with rum, cream and brown sugar, it's a dense, squishy loaf that's perfect for enjoying with a cup of tea mid afternoon.
- 2 tbsp. rum
- 75g raisins
- 100ml water
- 275g bread flour
- 1 tbsp. dark brown soft sugar
- 1 tbsp. butter
- 1 tsp. salt
- 2 tbsp. double cream
- 1 tsp. rum extract
- 1 egg
- 1 tsp. olive oil
- 1 1/2 tsp. dried active baking yeast
Pour the rum over the raisins and leave to sit for half an hour.
Put the water, bread flour, sugar, butter, salt, cream rum extract, egg, oil and yeast into the bread machine in the order recommended by the manufacturer. Use the Basic or Sweet Bread setting and press Start, then add the rum and raisins towards the end of the kneading setting or at the signal for fruit and nuts.
