Green beans and salty feta cheese combine in this delicious salad recipe that includes a fresh, zingy salad dressing. Perfect with BBQ meats or stirred into cold pasta for lunch.
- 675g runner beans, trimmed and sliced
- 1 onion
- 2 garlic cloves
- 125g feta cheese, cubed
- 125ml each apple cider vinegar and rice wine vinegar
- 80ml rapeseed oil
- 1 tbsp. caster sugar
- 1 tsp. salt
- Dash Worcestershire sauce
- Good pinch black pepper
Thinly slice the onion and place into a colander. Drop the beans into a pot of boiling salted water and cook for 4-5 minutes. Drain over the onions to slightly blanch them.
Finely dice the garlic. Whisk together apple cider vinegar, rice wine vinegar, rapeseed oil, sugar, salt, Worcestershire sauce, black pepper and garlic until well combined. Add the beans and onions.
To serve, toss the beans with half the feta, then sprinkle with the rest of the feta to serve.
