Green beans, squishy sun-dried tomatoes and lemon zest combine in this delicious Italian-style salad. Serve at a BBQ or with plenty of cold meats and warm breads.
- 400g runner beans, sliced and trimmed
- 200g sun-dried tomatoes in oil, roughly chopped and patted dry
- 50g butter
- 1 tsp. brown sugar
- Zest of 1 lemon
- 1/2 red onion, finely diced
- Extra-virgin olive oil
- Salt and black pepper to taste
Heat a frying pan over a medium heat with a little glug of oil and the butter. Once melted, add the onion and sugar and cook gently for around 10-15 minutes until softened and caramelised.
Add the beans, tomatoes, lemon zest and salt and pepper. Stir to coat, then cook for around 5 minutes. Serve warm.
