Runner Bean and Sun-Dried Tomatoes recipe

Preparation Time: 10 minutes | Cooking Time: 20 minutes

Green beans, squishy sun-dried tomatoes and lemon zest combine in this delicious Italian-style salad. Serve at a BBQ or with plenty of cold meats and warm breads.

Ingredients

  • 400g runner beans, sliced and trimmed
  • 200g sun-dried tomatoes in oil, roughly chopped and patted dry
  • 50g butter
  • 1 tsp. brown sugar
  • Zest of 1 lemon
  • 1/2 red onion, finely diced
  • Extra-virgin olive oil
  • Salt and black pepper to taste

Directions

  1. Heat a frying pan over a medium heat with a little glug of oil and the butter. Once melted, add the onion and sugar and cook gently for around 10-15 minutes until softened and caramelised.

  2. Add the beans, tomatoes, lemon zest and salt and pepper. Stir to coat, then cook for around 5 minutes. Serve warm.

Make the salad extra zesty with a squeeze of fresh lemon juice. Recipe serves 6 as a side.
